East Carolina Mop Sauce. This BBQ sauce is a little different than all the other and is not actually a typical barbecue sauce, but it's still quite popular and liked by many people. This sauce is based on vinegar and makes the meat taste a lot better than usual. While most sauces are applied shortly before serving, this kind is actually used to rub the meat with it while it's still cooking. This way the flavour gets deep inside the meat and changes the entire taste of the dish. The East Carolina mop sauce actually contains mainly vinegar and hot sauce, and tastes great with pulled pork or ribs. But the fact it's used during cooking also means that it will get on the grill and sometimes it's really hard to clean it. Lexington dip. The Lexington dip comes from North Carolina where they like to call the BBQ sauce “dip”. Some areas may prefer the tomato based sauce, other may prefer vinegar, but in South Carolina they prefer mustard. This sauce contains yellow mustard, brown sugar, apple vinegar and many different spices. In some recipes they even add molasses or honey to make it more natural.
Kansas City Sauce. The city of Kansas is well known for its delicious barbecue and their sauces. The Kansas city barbecue sauce is based on tomatoes. The other ingredients are various spices and brown sugar or molasses, which is supposed to bring sweetness. This sauce is added to the meat only before serving, because otherwise the sugar will burn and stick to your grill.
Texas Style Sauce. The Texas sauce is very delicious, but also quite thick, especially compared to the vinegar based sauces. This is a tomato based BBQ sauce, and it's purpose is to be added to the meat just before serving it. The Texas sauce also contains spices like cumin, paprika and chilli pepper. You can also add other spices, depending on your preferences.
